

Zefir (Russian: зефи́р) is a type of soft candy made by whisking sugar and egg whites with fruit and mulberry puree (mostly applesauce), followed by the addition of a gelling agent such as pectin, carrageenan, agar or gelatin. It is usually produced and sold in two northern European countries, Estonia and Latvia. It is also known in the countries of the former Soviet Union. The name comes from the Greek mythology god Zephyros.
